STORY TIME

This week was my second week off for holidays, and was quite slow. I tried to enjoy treating myself with more rest and to get my biological clock back on track, which did not work very well unfortunately. I caught cold and had more lazy meals than usual, but I feel a lot better now and ready to jump back into work... to some degree.

 
Monday & Thursday brunch: Brioche French toast, berry jam and fruits
I got a big loaf of brioche from local TooGoodToGo pick up, so I immediately sliced and stored them to prep for French toast for brunch menu. 
I also tried cooking the banana slices on pan because I don't own a torch, and it just made the banana soggy and gross. My husband also really liked this menu.

Tuesday dinner: Chicken pesto sandwich with squash soup
The sandwich was also made with superseed grain bread I picked up from the TooGoodToGo.

Wednesday lunch: Ham cheese sandwich

Wednesday dinner: Home made lasagna
This lasagna was worse than our usual ones, because we used mushroom cream sauce instead of bechamel and barely used any cheese. The dish was basically heavy meat with some pasta.

Friday lunch: Pork strip, potato, veggie
This was leftover potato from last Sunday, and the pork strip I picked up from the Friday market. The meat is quite heavy in fat, but has amazing taste.

Friday dinner: Starbucks ham cheese sandwich
I was very exhausted and worn out from my cold, so I was really happy that Starbucks TooGoodToGo order included this sandwich for a quick bite.


Saturday dinner: Home party with steamed crab, sushi, and pork shoulder
I was invited to a home dinner party with lots of great food!

Sunday brunch: Waffle with apple & fig chutney and whipped cream

I made the waffle batter from scratch with lots of fancy ingredients like whipped egg white and vanilla extract, but the store bought batter where you simply add your own milk tasted way better for some reason. I will just stick to the store bought one from now on. 

I was craving old school Korean street food - thin crispy waffle with apple jam and whipped cream. This used to cost about one Euro when I was little, so I recreated a fancier version of it since I cannot get them from Amsterdam streets. 

Sunday dinner: Mushroom risotto with soy ginger chicken and green beans
I still have so much ginger left from making ginger lemon honey tea while fighting the cold, so chopped the ginger for Asian marinade chicken for multiple meals.
